140g milk, 50g eggs, 260g gluten flour

40g sugar, 10g milk powder, 1.5g salt

25g butter, 3g yeast

Add milk and egg liquid to the bread machine, put milk powder and high-gluten flour on top, dig a small hole in the middle and bury the yeast, put sugar on one side of the bucket, and mix a small amount of salt on the other side and put it in the bread machine

Then knead for 10 minutes, and a coarse film will appear after kneading evenly. Hand kneading should also be in this state, some flour brands have poor water absorption, you can appropriately reduce 20g of milk, otherwise it will be very sticky!

Add softened and cut into small pieces of butter and knead for 25 minutes until there is a glove film. Rub the glove film by hand and it's fine.

Cover the kneaded dough with a wet towel, leave it in a warm environment to rise until it doubles in size, take it out and press it to vent, and knead it into a dough.

The temperature of one shot is about 35 degrees, you can put it in the oven to ferment at 38 degrees for an hour, remember to put the pot water at the bottom. Fermentation in the oven is even better.

After the fermented dough is vented, it is divided into 50g of small dough and rolled into a tongue.

Then roll the long sides into long strips with two pointed ends, and arrange them into a baking tray lined with baking paper, this 23cm*23cm eight-inch baking tray only needs about 8 small dough, which is a total of 400g.

Cover the plastic wrap and let it ferment in a warm environment for another half an hour, you can also put it in the oven to ferment, brush with a layer of egg wash after fermentation, and sprinkle with desiccated coconut or powdered sugar

The temperature of the second engine is 40 degrees Celsius when using an oven

If you like dried fruit or nuts, you can put it in the dried cranberry pumpkin seeds, and bake it in the oven preheated to 165 degrees for 28 minutes. Pay attention to the coloring, cover the tin foil when the surface is slightly yellow and continue to bake.
