【Sweet and sour eggplant】
Prepare the ingredients as follows:
Three eggplants, five cloves of garlic, three spoonfuls of light soy sauce, one spoonful of dark soy sauce, one spoonful of oyster sauce, one spoonful of vinegar, one spoonful of tomato paste, one spoonful of sugar, and an appropriate amount of cooking oil.
The cooking steps are as follows:
Step 1: Prepare all the ingredients, chop the garlic into minced garlic, peel the eggplant, cut it into hob pieces, put the eggplant in a large basin, add a little starch and grasp evenly.
Step 2: Pour oil into the pan, add the eggplant and stir-fry for 3 minutes.
Step 3: Mix the sauce below, three spoons of light soy sauce, one spoonful of dark soy sauce, one spoonful of oyster sauce, one spoonful of tomato paste, one spoonful of sugar, and one teaspoon of starch and stir well with an appropriate amount of water.
Step 4: Add a spoonful of minced garlic and stir well.
Step 5: Pour the seasoned sauce into the eggplant.
Step 6: Cover the pot and simmer for 1 minute.
Step 7: Reduce the juice on high heat and stir-fry evenly to get out of the pot! It's really delicious to put it on the plate.
Tips:
(1) Put a thin layer of starch on the eggplant after it is cut into pieces, so that it will not absorb too much oil when stir-frying.
(2) Eggplant sweet and sour sauce can be added or subtracted according to your preference, my family is because my son doesn't like vinegar very much, so I usually use it sparingly.
