【Chilled Tofu】

Ingredients: 1 piece of northern tofu, 3-4 spicy millet, 2 shallots, appropriate amount of oil and salt, 1/2 teaspoon of Sichuan pepper powder, 1/2 teaspoon of chili powder, 1 tablespoon of light soy sauce, 1 teaspoon of sugar, 1 tablespoon of rice vinegar,

Steps:


1. Cut the tofu into pieces of about 1.5 cm.


2. Cut the shallots into chopped green onions, mince the garlic, cut the millet spicy into chili rings, and put the minced garlic, Sichuan pepper powder and chili powder in a heat-resistant bowl.


3. Add water to the pot and boil, add a small amount of salt, and then blanch the tofu, after the water boils, boil for 3-4 minutes, remove the tofu, when the tofu is blanched, add a little salt to the water, and the tofu will not be easy to break.


4. After the tofu is taken out, put it in cold water to cool, drain the water and set aside, after the tofu is blanched, put it in cold water to cool, and the tofu will not stick together.


5. Heat oil in a pot, pour the hot oil into a bowl with chili powder, minced garlic and peppercorns, and fry the seasoning until fragrant. Add sugar, salt, rice vinegar, light soy sauce, stir well, and the sauce is ready.


6. Put the tofu cubes in a large bowl, pour in the seasoning sauce, and mix well with chopsticks.


7. Add chopped green onion and millet spicy, stir evenly, and put on a plate. A plate of cold tofu with full color and flavor is ready.


Tips:
