【Frozen tofu and bean sprouts pork rib soup】
Ingredients: 600 grams of pork ribs, 200 grams of soybean sprouts, 200 grams of tofu, 1 shallot, 15 grams of ginger
Make:
1. Wash the purchased pork ribs with warm water first, soak them in water for half an hour, then rinse them again and drench them dry.
2. Heat the pot and pour less oil, stir-fry the pork ribs, green onion and ginger until the surface is slightly colored. If there is blood oozing, rinse it off, or wipe it off with kitchen paper.
Note: The soup will be more fragrant when the ribs are stir-fried, and this process can also be replaced by blanching.
3. Then pour in water and spread over the ribs, the amount of water depends on whether you want to drink light or rich. After boiling, skim off the surface if there is foam.
Next, cook the ribs in a casserole (bring to a boil on high heat and turn to low heat), a rice cooker, or a pressure cooker (pressurized for 20 minutes) until you can easily poke the meat through with chopsticks.
5. Clean the soybean sprouts and stir-fry them with some shallots and ginger to bring out the fragrance. Note: Stir-fry the soybean sprouts in oil, one can remove the beans, and the other boiled soup is thicker. Soybean sprouts are used here, and mung bean sprouts are not suitable for stew.
6. Then pour it into a small casserole, put the frozen tofu, scoop a few spoons of the cooked pork rib soup, boil and add salt to taste. Note: If you cook a large amount of pork rib soup and can't drink it all at once, please scoop out some vegetables to cook, and the rest of the pork rib soup is easy to preserve.
7. Add a few more ribs, continue to boil for two minutes and enjoy.
Note: The bean sprouts and frozen tofu are simmered for a while to add more flavor, and the pork ribs are already cooked, so you can put the pork ribs to boil at the end.
