1. Ingredients: half a duck, 1 piece of ginger, 3 small onions, 1 handful of green onions, half a bowl of white wine, 2 spoons of dark soy sauce, 3 spoons of light soy sauce, 2 spoons of sour plum sauce, half a bowl of white wine, appropriate amount of rock sugar, 2 star anise, 2 bay leaves, appropriate amount of cooking oil.

Second, the practice of sour plum duck:

1. Prepare all the ingredients, pluck the fluff on the surface of the duck, and then wash it with water. Because the pot at home is relatively small, the duck head is chopped off, and the duck feet are also chopped off and placed on the plate. Pour in 2 tablespoons of dark soy sauce to color, then spread evenly on the surface of the duck with your hands and set aside to marinate for 10 minutes.

2. While it's time to marinate the duck, let's prepare some ingredients, clean the small onions and put them in a bowl. Peel the ginger, clean it, then cut it into slices and put it in a bowl as well. Wash the shallots, leaving the shallots, and put them in a bowl for later use.

3. Put an appropriate amount of cooking oil in a pot, and heat the oil first. Then put the duck skin side facing the pan and fry the duck skin first. When the time is up, remove the lid, turn the duck over and continue to simmer for 20 minutes.

5. After simmering for 40 minutes, then remove the lid and remove the garnishes inside, and we will start to collect the juice on high heat. While cooking, use a spoon to pour the soup over the duck to make the meat more flavorful and colorful. But don't dry the soup too much, and leave it a little bit, so that the duck meat will be wrapped in the soup and it will taste better.

6. Bring out the duck meat and let it cool first, then chop it into small pieces and place it on a plate. At this time, heat up the freshly boiled duck soup and pour it evenly on top of the duck, and our delicious sour plum duck is ready. Tips: 

The liquor added here is to remove the smell and increase the flavor, and the alcohol in it will basically volatilize after cooking, so there is no need to worry about the alcohol in it. If you don't like liquor, you can also buy rice wine in the supermarket, and the effect is the same.
