Today, I use Chinese cabbage and tofu to share with you the practice of stewed tofu with cabbage vermicelli, without putting a piece of meat, and it tastes particularly fragrant.

【Cabbage vermicelli stewed tofu】

Ingredients: 1/2 Chinese cabbage, 400 grams of tofu, 100 grams of sweet potato vermicelli, salt, chicken essence, white pepper, chopped green onion, star anise, lard, light soy sauce.

To make cabbage stewed tofu, you should choose long cabbage with more cabbage, which tastes very good when used to make stew; Tofu should choose brine northern tofu, which has less moisture content and is easier to absorb the soup and taste.

Steps:

1. Cut the tofu into 0.5 cm thick slices for later use.

2. Wash the cabbage and remove the hard stems at the roots, then use the back of the knife to scatter the cabbage, and cut it into large slices with an oblique knife; Cabbage leaves are torn into large pieces by hand.

3. Break the sweet potato vermicelli into long sections, put it in a basin, add an appropriate amount of water and soak it for more than 1 hour, and soak the vermicelli until soft.

4. Add oil to the wok, pour out the oil after it is hot, then add cooking oil to moisten the pan, then sprinkle a layer of edible salt on the bottom of the pan, fry the tofu in the pan, fry one side until golden brown, turn over and continue to fry the other side, fry all the two sides until golden brown and put it out for later use. Frying tofu can set the shape of the tofu, which is not easy to stew during the stewing process, and can also remove the beany smell of the tofu and make the soup taste better.

5. Add a small spoon of lard to the wok to dissolve, add a star anise and a handful of chopped green onions to fry the fragrance after the oil is hot, and then stir-fry the Chinese cabbage in the pot.

6. Fry the Chinese cabbage until the volume is reduced, then add an appropriate amount of boiling water, add salt, chicken essence, light soy sauce to taste, then put the fried tofu in the pot, then spread the sweet potato vermicelli on top, cover the pot, and simmer over medium-low heat for 5-10 minutes.

7. Simmer the sweet potato vermicelli until soft and the tofu until flavorful, add a little white pepper, stir evenly and then get out of the pot.
