【Lotus paste crisp】
Ingredients: 50 grams of butter, 100 grams of cake flour, 20 grams of whole egg liquid, 25 grams of powdered sugar, 1 egg yolk, appropriate amount of black sesame seeds, appropriate amount of lotus paste filling
1. Pour the softened butter and powdered sugar into a basin and stir in one direction with a manual whisk until it is smooth and slightly whitish in color. Here the butter must be softened in place, otherwise it is not good to mix well with powdered sugar, and it is generally softened to the point that if you pinch it lightly with your fingers, there will be a pit, indicating that the softening is in place
2. Then add the whole egg liquid to the butter bowl in 2 times, and mix thoroughly each time before adding the next time. The egg liquid here must be at room temperature, if you just take it out of the refrigerator and use it directly, it is easy to cause the butter and oil to water to separate, so it is recommended that you take the eggs out of the refrigerator in advance to warm up, at least half an hour
3. Then pour the low-gluten flour into the basin, stir it roughly with a spatula, and then knead it into a dough with clean hands, put the kneaded dough into a fresh-keeping bag, and send it to the refrigerator for 12 minutes
4. After the dough is refrigerated, we divide it into two, then take a dough first, and roll it into long strips with a rolling pin, as shown in the figure below
5. Then roll the lotus paste filling into long strips and put it on the dough sheet. The lotus paste filling can also be replaced with other fillings, such as bean paste filling, purple potato filling, etc
6. Roll it up from top to bottom, be sure to roll it tighter when rolling, and after rolling, you can rub it back and forth a little more, so that the filling and dough will be wrapped more tightly. At this point, the oven is preheated to 170 degrees
7. Then cut it into segments with a knife, and the remaining dough and filling are shaped in turn
8. Put the cut raw embryo into a non-stick baking tray (if your baking tray is not a non-stick plate, then you need to put oil paper on it in advance to prevent sticking), then brush the beaten egg yolk liquid on the surface, and then sprinkle an appropriate amount of black sesame seeds, black sesame seeds can also be replaced by white sesame seeds
9. Finally, put it into the middle layer of the preheated oven, hot air mode, 160 degrees above and below heat, and bake for 25 minutes. If the oven at home does not have a hot air mode, you can just use the normal baking function
10. My personal favorite Chinese dim sum is small, crispy and delicious, and it will satisfy your cravings
Tips:
1. Butter can not be replaced with corn oil or lard, although these two oils can also be successful, but the taste and texture are not the same thing at all, if you want to make a good finished product crispy and delicious, then you must use butter
2. Baking temperature and time, for reference only, after all, the temperature difference of each oven is different, if the finished product you bake is cooled and tastes a little wet, then you need to return to the oven and bake for a few minutes
